Chicken Pesto Pizza
Make it your own by adding any toppings of your choice. A house favorite for sure!!!
Crust:
1 cup oatmeal
1/2 cup flour
1/2 cup flax meal
1/4 cup honey
1/4 cup E.V. Olive oil
mix all together in a bowl, add Italian seasonings as desired (I add garlic, basil, and oregano)
Press into a pan nearly 1/8 inch thick (its pretty thin)
Bake at 350 for 10-12 minutes
Remove from oven.
Toppings:
Add a light layer of pesto, diced pre-cooked chicken, avocado, diced tomatoes, and FRESH grated parmasean cheese. Put back in over for additional 5-7 minutes.

I love this salad. First, it takes less than 5 minutes to make! For those who are busy, this is a healthy salad that will satisfy any palate! 2nd, it is great for 3 days in the refrigerator! No excuses to not eat healthy!!
